Gooseberry Jam Cookies 🪿

  • 7 cups flour
  • 2 tbsp baking powder
  • 4 sticks butter (cold)
  • 2 cups sugar
  • 6 large eggs
  • 1 12 oz jar gooseberry jam (Thursday Cottage from Amazon)

Whisk flour and baking powder together into a medium bowl and set aside. In a large mixing bowl, blend together butter and sugar until crumbly. Add eggs and beat on low-medium speed about 1 minute until well blended.  Add jam and beat until fully incorporated, 2-5 minutes. Add dry ingredients in small batches and mix until a ball forms.  Refrigerate batter for 15-20 minutes before baking and keep cold between batches. 
Drop rounded balls of dough onto lightly greased cookie sheet or baking paper. Bake 9 minutes at 350⁰.  Cookies should be soft to the touch and very light golden on bottom only. 

This was my cookie for cookie club, which was held at my house this year (!). Therefore, this recipe makes 12 dozen; adjust to your needs. My theme was “The 12 Days of Christmas,” and my day was “Six Geese A-laying.”

I served 2 of my best soups: Creamy Chicken and Wild Rice Soup and Easy 10-Vegetable Soup. Both were well-received!
