Brandied Cheese Spread

This stuff is to die for. Perfect for a holiday party, but make extra for home because you will not have any leftovers.

  • 8 oz cream cheese (can be lowfat)
  • 1/4 cup sugar
  • 1/4 cup (2 oz) slivered almonds
  • 2 tbsp any brandy
  • 1/2 tsp instant coffee granules

Dissolve coffee granules in 2 tsp hot tap water. If using mixer, place all ingredients into bowl and beat until fluffy. If mixing by hand, chop almonds first and stir vigorously until well combined. Serve with crackers, fruit, or just a few spoons!

    This is really intriguing. I have never cooked with alcohol, and the idea of brandy plus coffee plus cream cheese already stops me in my tracks, but with sugar and almonds? Is it sweet? savory? And you had me at “fluffy.”

      Yes to all the above. You don’t taste the coffee, it just adds a nice complexity. It’s a little sweet, a little savory, and the brandy and almonds round it out.
