Brunch Casserole

This dish has all the flavors of a loaded baked potato, in casserole form. It was perfect for a chilly Christmas morning in our PJ’s.

  • 1 lg bag shredded hash browns
  • 8 sliced bacon
  • 16 oz container sour cream
  • 1/2 cup mayonnaise
  • 3 cups shredded cheese
  • 6 green onions, diced (white and green parts)
  • 2 eggs
  • salt and black pepper to taste
  • dash of paprika

Rinse and drain potatoes in large collander. Fry bacon, drain, and crumble. In a very large bowl, stir together all ingredients and spoon into greased 13x9x2 dish or pan. Bake at 350⁰ for 35-45 minutes until golden on top. Allow to cool 10-15 minutes before serving.
