This is always our first choice to order if a kid we know is selling cookie dough; I realized this week that we had all the necessary ingredients in-house (including homemade peanut butter) and that I should probably try baking some from scratch! They were surprisingly easy and quite delicious.
- 1/2 cup creamy peanut butter, warmed
- 1 cup lightly packed brown sugar
- 1/2 stick butter, softened
- 1 egg
- 1 tsp vanilla
- 1 cup old-fashioned or quick oats
- 1 cup all-purpose flour
- 1 tsp baking soda
- 3/4 cup bittersweet chocolate chips
- 3/4 cup M&Ms
Stir together first 5 ingredients until well blended. Stir in oats, flour, and baking soda until moistened; then gently fold in chips and M&Ms. Drop by rounded spoonfuls onto baking sheet and bake at 350 degrees 8-10 minutes. Cool on wire rack and store in airtight container. (Can top with sea salt if desired.)
