Buffalo Chicken Pasta

Yes, I got this from a TikTok video; I’m not embarrassed to admit it. I had to adjust some of the ingredients but the technique is the same as the original.

  • 1 lb pasta (I like rigatoni)
  • 1/2 lb shredded chicken
  • 5 oz tub of chive & onion cream cheese
  • 2 cups water
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup shredded cheese (I like Colby jack)
  • 1/2 stick butter
  • 2 tbsp Frank’s Red Hot sauce
  • 1 tbsp ranch dressing mix or Trader Joe’s Green Goddess seasoning
  • Salt and black pepper to taste

Pour dry pasta into casserole dish; make a well in the center and place cream cheese in one chunk. Cover with shredded chicken. Melt butter, add milk, water, broth, and hot sauce, stir well and pour over dish; do not stir. Cover with aluminum foil and bake at 350⁰ for 45 minutes. Remove from oven, uncover, sprinkle with dressing mix or seasoning, and stir very well. Top with shredded cheese and bake until cheese is bubbly and golden.
