This is not an exact replica of the famous salad from the regional chain, but it’s very close and keeps better (without the wet tomatoes and sliced beets). It’s also simple to make, with pre-packaged ingredients.
- 4 bags Italian blend salad (romaine & radicchio)
- 1 pkg sliced white mushrooms
- 1 can garbanzo beans, drained and rinsed
- 1 bunch Italian flat-leaf parsley, stems removed
- 1/4 cup sliced red onion
- 1 pkg shredded mozzarella cheese (2 cups}
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 1/4 cup lemon juice
- 1 tsp minced garlic or 1/2 tsp garlic powder
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
Whisk dressing ingredients together. Toss vegetables together, then add dressing and toss again. Top with cheese and serve, or refrigerate for up to 12 hours.
