- 1 pkg pork chops (1.25 to 1.50 lbs, boneless or bone-in)
- 1/4 cup brown sugar
- 1 tsp salt
- 1/2 tsp black or white pepper
- 1/2 tsp cayenne pepper*
- 1/2 tsp paprika (regular or smoked)*
- 1/2 tsp garlic powder
- 2 tbsp olive oil
Mix dry ingredients together and rub liberally over pork (use as much of the rub as you can). These can be stored covered in the refrigerator overnight, or cooked immediately. Allow to sit for 15 minutes at room temperature if cooking after refrigeration.
Preheat oven to 350 degrees. Heat oil in cast iron or similar skillet on medium-high until oil is “shimmering.” Place pork chops in single layer and cook for 5 minutes on each side. Move to oven and cook until desired doneness, 5-10 minutes. The brown sugar rub makes the most wonderful glaze! We love these chops with a baked sweet potato.
*(I have seen this made successfully with 1 tsp fresh or dried rosemary instead of the cayenne and paprika. You can also invent your own combination of spices).

I love pork and this was very satisfying. The pork has a subtle heat that dances delicately on the tongue. Paired with a sweet potato its a classic combination that is hard to beat. You should try this soon.
