Cajun Fettuccine

  • 8 oz fettuccine noodles
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/4 tsp onion powder
  • 1 tbsp flour
  • 1 cup heavy cream
  • 1 tbsp tomato paste (ketchup will work too)
  • 1/2 cup Parmesan cheese
Boil noodles until al dente; drain. Saute onion and pepper until soft; stir in seasonings and flour until roux forms. Stir in cream and tomato paste and heat until bubbling. Remove from heat and stir in Parmesan, then pasta. Serve as a side or topped with chicken, shrimp, or other protein.
