Candy Cane Cookies

  • 2 cups flour
  • 1 cup sugar
  • 2 sticks butter, softened
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp peppermint oil or extract
  • 1 egg
  • 1 can frosting (I prefer cream cheese)
  • crushed candy canes

Stir together dry ingredients until well combined; cut in butter, then add extracts and egg and stir until somewhat incorporated. Finish working dough with hands until fully blended and moist. Roll into balls and place on ungreased baking pan; press lightly to flatten top. Bake at 375 for 9-11 minutes, until tops are just beginning to turn golden. Cool on pan 5 minutes then transfer to wire rack. When completely cool, frost and sprinkle top with candy pieces, pressing down lightly to adhere to frosting (or, pour candy into plate and invert frosted cookie into the crumbs to coat).

These were inspired by a Hallmark movie (and its novelization), Christmas Camp. The cook at the inn where the movie takes place shares my name; so I’m sharing her cookies!
