Caesar Pasta Salad

Since we have been home every day working and doing school, we’ve been exploring different options for quick lunches (you can only eat so many Spaghettios and cups of Easy Mac). We discovered a boxed pasta salad kit in Caesar flavor, and we have fallen in love. In order to simplify (and save some money), I came up with a DIY version that can be prepped ahead and mixed together before serving.

You will need:

  • 16 oz short pasta, cooked, drained, and rinsed

For the dressing:

  • 1 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • splash of lemon juice
  • splash of milk
  • salt and [a lot of] black pepper to taste

For the topping:

  • 1/4 cup Parmesan cheese
  • 1/4 cup crushed croutons

Prepare all 3 parts ahead of time. When ready to serve, take desired amount of pasta, add desired amount of dressing, and top with desired amount of topping. Stir well and enjoy. (If preparing for a group, use all of each, of course. This recipe makes 3 lunches for the 2 of us, or 6 servings total.)

We make this with a 5 oz packet of salmon added; it is really, really tasty (and full of protein!)
