Pumpkin Pecan Baked Oatmeal

Not just for November! 🍂

  • 1 regular can pumpkin puree (not pumpkin pie filling)
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup brown sugar
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 2 1/2 cups rolled oats
  • 1/2 cup chopped pecans

Stir together first 7 ingredients until fully incorporated. Fold in oats, then gently fold in pecans. Pour or spoon into well-greased pan or dish and bake at 350⁰ for 35-45 minutes. Cool 10 minutes, slice, and serve.
