- 1 small sweet onion, diced
- 2 tbsp butter or margarine
- 2 tbsp Balsamic vinegar
- 8 oz Neufchatel (lowfat cream) cheese, softened*
- ¼ cup Dijonnaise
- Salt, black pepper, and cayenne or hot sauce to taste
Cook onion in butter, salt, and pepper until completely transparent and just starting to brown. Stir in vinegar and let soak into onions; turn off heat and add cheese and Dijonnaise, stirring until well blended. Add seasonings as needed (more salt and pepper or a dash of Tabasco or Sriracha if desired).
*I have also made this with half Neufchatel cheese and half lowfat sour cream with favorable results.
This fills two small bowls or one large bowl. Serve immediately or refrigerate (let sit to soften before serving).
