Pizza Soup

Add to slow cooker:

  • 1 lb. pork sausage or ground beef, browned & drained
  • 1 cup sliced pepperoni, cut in half or fourths (or use mini-pepperoni)
  • 1 large or 2 small can(s) tomato sauce or pizza/pasta sauce
  • 1 package sliced fresh mushrooms
  • 1 can diced tomatoes, plain or Italian (optional if your sauce is chunky)
  • 32 oz (approximately) beef broth
  • 2 cups water
  • 1 tbsp minced garlic
  • 2 tbsp dried onion flakes
  • 2 tbsp olive oil
  • 2 tbsp Italian seasoning mix
  • Fresh ground pepper to taste

Cook on high 3-5 hours or low 6-8 hours. Then add:

  • 3 cups dried pasta (I prefer wide egg noodles)
  • ¼ cup grated Parmesan cheese
  • More Italian seasoning & ground pepper to taste

Cook 30 more minutes. Serve topped with shredded Mozzarella or Italian blend cheese if desired.
