Sausage & Zucchini Soup

  • 1 lb pork sausage (or Italian sausage)
  • 1 tbsp Italian seasoning mix
  • 2 tbsp dried minced onion
  • ½ tsp garlic powder
  • 1 tsp salt
  • Black pepper to taste
  • 2 cans petite diced tomatoes
  • 32 oz beef broth
  • 3 large zucchini (or equivalent), cut into ribbons
  • ¼ cup grated Parmesan cheese
Brown sausage with seasonings in large crock pot on high (or in microwave if pressed for time). Add tomatoes, broth, and zucchini. Cover and cook 3 hours on high or all day on low. Add cheese right before serving.
