- 2-3 cups cooked shredded chicken*
- 32 oz chicken broth or stock
- 2 cups water
- 1 small or ½ large sweet onion, minced
- 3 cloves garlic, minced (1 tsp)
- Zest of one lemon (optional)
- Juice of one lemon (1/4 cup)
- 1 cup orzo pasta
- ½ tsp ground thyme
- 1 tsp dried or 1 tbsp fresh rosemary
- Salt and black pepper to taste
Place chicken,* broth/stock, water, onion, garlic, lemon zest, and seasonings into large crock pot on low for 4-8 hours. An hour before serving, add lemon juice and orzo. If preparing a day ahead, cook orzo separately and add when serving because this pasta will expand significantly in the liquid. (Keep this in mind with leftovers as well.)
*(You can also use 1 lb uncooked chicken breast pieces; just remove, shred, and place back in pot when adding orzo.)
