Lemon Orzo Chicken Soup

  • 2-3 cups cooked shredded chicken OR 2 large cans
  • 32 oz chicken broth or stock
  • 2 cups water
  • 4 carrots, shredded or chopped
  • 2 stalks celery, diced
  • 1 small or ½ large sweet onion, minced
  • 3 cloves garlic, minced
  • Zest of one lemon
  • Juice of one lemon
  • 1 cup orzo pasta
  • ½ tsp ground thyme
  • 1 tsp dried or 1 tbsp fresh rosemary
  • Salt and black pepper to taste
Place chicken, broth/stock, water, vegetables, lemon zest, and seasonings into large crock pot on low for 4-8 hours. An hour before serving, add lemon juice and orzo. If preparing a day ahead, cook orzo separately and add when serving because this pasta will expand significantly in the liquid. (Keep this in mind with leftovers as well.)
