This is a traditional British dish, adapted for oven. The minimal simple ingredients work well together to season each other.
- 4-6 white or yellow potatoes (depending on size — I prefer Yukon Gold)
- 6-8 smoked sausages (depending on size)
- 1 small onion
- 1 small head cabbage
- Splash of vegetable or olive oil
- 4 tbsp butter
- Salt and black pepper to taste
Rough cut potatoes, sausages, onion, and cabbage. Brush bottom of Dutch oven or large covered baker with oil. Layer potatoes on bottom and season liberally; top with sausage, then onion, finishing with cabbage (arranging carefully to allow for lid). Add more seasoning; cube butter and distribute evenly on top. Cover and bake at 375 for 90 minutes. Test vegetables for doneness (the skillet version of this dish is more of a hash than a casserole). Add more seasoning as needed. Allow to sit outside the oven still covered at least 10 minutes.
