- 2-3 good-quality steaks, about 1″ thick (I like New York Strip)
- 2 tbsp real butter + more for plating
- Salt plus your favorite seasoning mix (my favorite is Trader Joe’s BBQ Rub with Coffee & Garlic)
Tenderize steaks; season well with salt and seasoning mix and allow to come to room temperature (around 45 minutes). Preheat oven to 450 degrees. Heat cast iron skillet to medium high and turn on range fan if available. Melt butter in skillet, then add steaks. Allow to sear undisturbed for 2 minutes on each side (use a timer for accuracy). Place in oven for 4-5 minutes, 2-3 minutes for thinner steaks (test doneness with finger using this method). Remove from pan to plate and tent with foil. Allow to rest for 10 minutes. Top each with 1 tbsp of butter if desired.
