Mom’s Sweet Potato Casserole

  • 4 large or 6 small sweet potatoes
  • 1 cup white or 1/2 cup brown sugar
  • 1/2 cup milk [or egg nog]
  • 2 eggs
  • 1 tsp vanilla
  • Pinch of salt

Bake potatoes and cool. Scoop insides into bowl and mash until smooth. Add other ingredients and stir until incorporated. Spoon into 13 x 9 x 2 casserole dish that has been sprayed well. Then stir together:

  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1 stick butter, melted
  • 1/4 cup flour

Pour evenly over the top of the casserole and spread gently. Bake 350 degrees for 45-60 minutes.

In 2017, my mother-in-law asked me to bring sweet potato casserole to our family Christmas Day dinner. I knew my Mom’s recipe would be ideal for the occasion! Little did I know at the time that my Mom would be in the hospital with pneumonia while we were eating her casserole (fortunately, she was released the next day). We lost her the following August.
