One Cup Cobbler

So easy yet so delicious. All you have to remember is the number one!

  • 1 cup self-rising* flour
  • 1 cup sugar
  • 1 cup fresh or frozen fruit (I prefer blueberries)
  • 1 cup milk
  • 1 stick butter, softened
  • 1 egg
  • 1 tsp vanilla
  • 1 dash cinnamon
  • 1 pinch salt

Measure fruit and add a bit of the sugar to the cup; stir lightly, and set aside. Stir together flour, remaining sugar, butter, cinnamon, and salt until incorporated but not smooth; stir in milk, egg, and vanilla until just combined. Pour batter into pie pan or dish. Pour off juice from cup and spoon fruit evenly over batter (do not mix in). Bake at 350 (325 for dark pan) until golden and lightly brown on edges, 35-45 minutes. Allow to cool slightly before serving. Great with vanilla ice cream!

* You really, really do not want to forget to use self-rising flour. Ask me how I know 😮
