One Cup Cobbler

So easy yet so delicious. All you have to remember is the number one!

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup fresh or frozen fruit (I prefer blueberries)
  • 1 cup milk
  • 1 stick butter
  • 1 tsp vanilla
  • 1 dash cinnamon
  • 1 pinch salt

Place stick of butter in 8 inch baking dish or pan and preheat to 350 degrees. Measure fruit and add a bit of the sugar to the cup; set aside. Stir together flour, remaining sugar, cinnamon, and salt; stir in milk and vanilla. When butter is melted, remove pan and pour batter into pan (do not combine with butter). Pour off most of juice from cup and spoon fruit over batter (again, do not mix in). Bake until golden and lightly brown on edges, 30-40 minutes. Allow to cool slightly before serving. Great with vanilla ice cream!
