This recipe, adapted from one found online, was the perfect solution for the annual tradition of having pie on Pie Day [March 14th or 3.14], which sneaked up on us during our self-imposed isolation for COVID-19* – we forgot to buy a pie or a pie crust, but all the ingredients for this one were already in our house! It’s called “magic” because it makes its own crust during baking.
- 1/2 stick butter
- 2 cups milk
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1 tsp vanilla
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 4 eggs
Preheat oven to 300 degrees (275 for dark pan). Melt butter in bowl in microwave. Add all other ingredients except eggs; once bowl is cool enough to touch, add eggs and blend with hand blender or mixer [or in blender or food processor] for 30 seconds. Pour into deep pie pan lightly sprayed/brushed with cooking spray. Bake 1 hour, until custard is set and top has browned. Allow to cool and refrigerate at least 1 hour before serving.

*(I really, really had to resist the urge to name this “Corona Pie-rus.” I plan for this recipe to have a much longer life than the pandemic virus we’re currently working to avoid.)
