Egg Roll in a Bowl

  • 1 lb ground pork (can also use leftover cooked pork loin)
  • 1 bag (14 oz or so) cole slaw mix
  • 1/4 cup diced yellow or green onion
  • 1 egg (optional, non-traditional)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp minced garlic (about 4 cloves – or 1/2 tsp garlic powder)
  • 1 tsp ground ginger
  • Salt and black pepper to taste
  • Wonton strips or chow mein noodles to garnish (optional)

Brown pork in medium skillet OR finely dice leftover pork and reheat in 2 tbsp water + a little extra oil. Do not drain. Stir in all ingredients except cole slaw and egg; allow onion and garlic to soften somewhat and spices to bloom. Add egg and stir constantly until cooked. Stir in cole slaw and reduce heat to medium-low; continue stirring until cabbage is desired tenderness. Serve topped with strips or noodles, a drizzle of hoisin sauce, and more green onion if desired.
