S.O.S.* (Creamed Beef on Toast)

  • 1/2 lb ground beef
  • 1 packet country gravy mix
  • 2 cups milk (may not need all)
  • 3-4 slices sandwich bread
  • Salt and black pepper to taste

Season beef with salt and pepper and brown in skillet; do not drain. Reduce heat to low, sprinkle gravy mix over and stir well to incorporate. Stir in milk a little at a time to desired consistency. Toast bread and slice diagonally; layer 3-4 triangles like shingles on plate for each serving and pour meat mixture over.

I made this our first night of a cabin vacation, where there was limited cooking and storage space. I bought extra beef that I was already going to use for Hobo Dinners our 2nd night, so no further refrigerator space was needed. I served it with some baby carrots sprinkled with 1 tbsp butter, 1 tbsp sugar, and salt and pepper, microwaved 6 minutes on High.

*(This dish is colloquially known as “Shit on a Shingle,” due to the way the toast is layered and because the meat tends to look like…. well, you know.)
