- 1 stick butter
- 1 tbsp vanilla
- 1/4 cup peanut butter (smooth or crunchy)
- 1 package marshmallows (large or mini, doesn’t matter)
- 8 cups rice cereal*
Heat butter on medium in large saucepan until melted and beginning to brown; add vanilla and peanut butter and stir until combined well. Add marshmallows and continue to stir constantly (do not walk away from the pan!) When everything is melted and combined, remove from heat and add cereal. Stir gently until all cereal is coated; pour into 13 x 9 x 2 pan that has been liberally coated with cooking spray or butter. Pat down to desired firmness (I use the flat bottom of a storage container for this). Cover and let set at least 1 hour. Slice and serve.

*(Up to 2 cups cereal can be substituted with graham cracker crumbs if desired)

No but I will at some point. I prefer almond butter, but hubby is a PB guy.
