Herbed Chicken with Garlic Rice

  • 4-6 skinless chicken breasts
  • 2 cups white rice
  • 2 cups chicken broth
  • 1 1/2 cups hot tap water
  • 1/2 cup diced onion
  • 3 tbsp butter
  • 1 tsp minced garlic
  • 1 tsp sweet paprika
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp pepper

Place onion, garlic, butter, and half the salt in oblong baking dish and let heat in 350 degree oven for 15 minutes. Stir together remaining seasonings; pat chicken dry and sprinkle on both sides with mixture. Remove dish from oven, stir in dry rice, and arrange chicken on top. Pour liquids around chicken and bake covered with foil 30 minutes. Uncover and bake 15-25 minutes or until rice is done.

(I cut these chicken breasts in half because they were especially large)
