Two Bears’ Porridge

This is what I grew up picturing when reading the story of The Three Bears and their too-hot breakfast cereal. Porridge is any grain boiled in milk or water, with any chosen additives, and can be sweet or savory. My mother made this for her picky eater daughter, especially on days when I was sick. Hubby makes his version when I’m due to donate blood, because it has a high iron content. This makes enough for 2 hungry bears or 3 less hungry ones 🐻

  • 1 1/2 cups water
  • 1 1/2 cups milk
  • 1/2 cup Cream of Wheat
  • 3 tbsp sugar
  • 2 tbsp butter
  • 1 egg
  • pinch of salt

Heat water, milk, sugar, butter, and salt just to the boiling point. Whisk in cereal. When mixture resumes boiling, immediately reduce to medium low and whisk regularly until thickened; remove from heat. Beat egg and add hot cereal 1 tbsp at a time, stirring well, until it’s about equal egg-to-cereal ratio; then whisk egg mixture into cereal pot. Pour into serving bowls and allow to cool slightly before devouring.
