Pie Pan Cheesecake

This is just as delicious as cheesecake made in a springform pan, and much easier. I made my crust this time because I had some slightly stale sugar cookies, but it’s much simpler to buy a premade crust.

  • 2 blocks cream cheese
  • 3/4 cup sugar
  • 1/4 cup sour cream
  • 2 eggs
  • 1 tsp vanilla
  • 1 deep graham cracker crust

Let cream cheese soften to room temperature. Combine cheese, sugar, sour cream, and vanilla and beat well, either by hand or with mixer or food processor. Add eggs and continue beating only until incorporated. Pour into crust and bake at 325⁰ for 40-50 minutes. Let cool somewhat before storing in refrigerator for at least 2 hours. Top with pie filling, chocolate sauce, or your choice of good things.

You can also add in whatever specialty things you want, such as chocolate chips, nuts, candy bits, or (as I’ve done here) peanut butter.
