This Is Us Finale

Since 2016, we have been completely wrapped up in the lives of the Pearsons, a fictional family from Pittsburgh on the TV show This Is Us. To say this Tuesday night drama has been a roller coaster of emotion is an understatement. We have laughed, cried, gasped, yelled, and held hands as Jack, Rebecca, Kevin, Kate, Randall, and their ever-widening circles have shared their lives with us. Having lost both my mother and my husband’s father during the run of the show, we have related to the triplets’ journey of losing their parents, stepfather, and Randall’s birth parents only too well.

To celebrate the final episode, I created a menu inspired by favorite episodes from the show. We also re-watched our top 2 episodes from seasons 1-5 leading up to the finale. It was a touching and fitting sendoff and wrap-up to the past 6 years ❤️

  • Thanksgiving cheese dogs (S1 Pilgrim Rick)
  • Thanksgiving shrimp (S4 So Long Marianne)
  • Tomato soup (S6 Don’t Let Me Keep You)
  • Banana muffins with cream topping (S1 The Big Day)
  • Coquitos (S6 Miguel)

Coquitos:

  • 1 can coconut cream
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 cup rum
  • 2 tbsp vanilla
  • 1 tbsp cinnamon

Stir or blend all ingredients together until smooth. Chill at least 2 hours before serving. Top with sprinkling of more cinnamon if desired.
