Fish Sarciado

  • 4-6 fried fish fillets*
  • 1 tsp minced garlic (3-4 cloves)
  • 1/4 cup diced onion
  • 1 large can crushed tomatoes    
  • 1 egg
  • 1 tsp fish sauce (optional)
  • salt, black pepper, & hot sauce to taste
  • cooking oil

Heat oil in skillet and sauté onions until soft. Add garlic, tomatoes, and seasonings and simmer until sauce starts to thicken. Add egg and stir until fully incorporated and cooked. Nestle cooked/reheated fish into sauce and serve with white rice if desired.

*This Filipino dish is warm, comforting, and flavorful; I discovered it when looking for a way to refresh some leftover takeout, and it worked great! (Of course, you could also use fried fillets from the freezer or fry some fresh.)
