Parmesan Chicken Breasts with Pasta

  • 4 boneless chicken breasts
  • 3 cups uncooked short pasta
  • 4 cups water
  • 1 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 1 cup sour cream, whipped cream cheese, or some of each
  • 1 tbsp minced garlic or 1 tsp granulated
  • salt and black pepper

Preheat oven to 375.⁰ Spray oblong baking dish and pour dry pasta in, spreading evenly. Add water, stir gently, lay chicken breasts on top, and sprinkle liberally with salt and pepper. In medium bowl, stir together remaining ingredients and spoon over chicken. Cover with aluminum foil and bake for 20-30 minutes; uncover and bake at least 15 more minutes until golden. Allow to rest 10 minutes before serving. Easily halves for smaller portion.
