Instant Pot Pork Ramen

This is the recipe I decided to use to christen my new Instant Pot Pro that I won in a wellness recipe contest!

  • 4 pork cutlets
  • 32 oz vegetable broth
  • 2 cups water
  • 2 packets ramen
  • 2 eggs, soft-boiled
  • ¼ cup soy sauce
  • Up to 1 tsp Sriracha or chili garlic paste
  • 2 tbsp rice wine vinegar
  • 2 tbsp molasses
  • 1 tsp fish sauce
  • 1 tsp minced garlic
  • 1 tsp ground ginger
  • 1 tsp ground tumeric
  • Salt and pepper to taste
  • Drizzle of sesame or vegetable oil
  • Sliced scallions and sesame seeds for garnish (optional)

Place pork in single layer in pressure cooker and drizzle with oil. Sear on both sides on Saute mode. Cancel and add all other ingredients except noodles and eggs. Pressure cook for 20 minutes and allow natural release for 10 minutes. Cancel, remove pork, and add noodles; pressure cook for 3 minutes and do instant release. Place pork in bottom of each bowl, add noodles, ladle over broth, and top with egg, scallions, and sesame seeds.
