Jalapeno Corn Dip

So easy, delicious, and addictive!

  • 2 cups frozen whole kernel corn (16 oz package)
  • 2 cups shredded sharp cheddar
  • 3 tbsp jarred jalapenos, diced fine
  • ½ cup mayonnaise or mayo-mustard blend
  • ½ cup sour cream
  • ½ cup salsa
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
Mix together well all ingredients except corn and cheese. Stir in cheese, then fold in corn and let sit in refrigerator for at least an hour to get “happy.” Serve with sturdy chips (really good with Fritos scoops). Works great with lowfat mayo, sour cream, and/or cheese.
