Classic Lasagna

Lasagna is, in essence, a simple dish for which thousands of recipes exist. Here is mine.

  • 16 oz no-boil lasagna noodles
  • 32 oz any variety pasta sauce
  • ¾ to 1 lb ground beef
  • 32 oz cottage cheese
  • 2 eggs
  • 3 cups shredded Italian blend cheese
  • Italian seasoning blend
  • Salt

Brown ground beef and stir in about half of the sauce. Add a pinch of salt. Drain some of the whey off the cottage cheese; mix together with the eggs, 2 cups of the shredded cheese, Italian seasoning to taste, and another pinch or two of salt. Spray 13 x 9 x 2 pan and place one layer of noodles in the bottom. Spoon half the cheese mixture over noodles in an even layer. Add another layer of noodles and then the meat/sauce mixture, followed by another layer of noodles. Top with the rest of the cheese mixture and the final layer of noodles. Pour over the rest of sauce and sprinkle with the final cup of shredded cheese. Cover pan with foil and bake at 350 degrees (325 for dark pan) for 45 minutes; remove foil and bake another 15 minutes.
