I made these for a bridal shower brunch for a coworker who loves bacon and cheese (and breakfast foods!)
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- ½ tsp ground black pepper
- Cayenne pepper to taste (optional)
- 8 tbsp cold unsalted butter, cubed
- 1½ cups grated cheddar cheese
- 6 chives, diced
- 6 slices bacon, cooked and chopped or crumbled into small pieces
- 1 cup milk
For the egg wash:
- 1 large egg
- 2 tbsp water
- Drizzle of bacon grease (optional)
Combine dry ingredients in large bowl. Cut in butter with pastry cutter or fingers until consistency of wet sand. Stir in milk until moistened through, then add cheese, chives, and bacon. Pat into rectangle no more than 1/2″ thick; cut into small triangles with pizza or pastry cutter. Place on ungreased baking sheet(s) or stone(s) and brush with egg wash. Bake 400 18-20 min (if using 2 pans, switch them halfway through). Allow to cool but best served warm.
