These were the perfect entree for Memorial Day weekend at home!
- 1 lb lump crab meat, diced coarse
- 1 egg
- 1/4 cup diced onion
- 1/4 cup panko bread crumbs
- 2 tbsp mayonnaise
- 1 tbsp baking powder
- 1 tsp Old Bay seasoning (or other seasoning blend)
- 1/2 tsp salt
Stir all ingredients together in bowl until combined. Microwave 30 seconds to warm and par-cook onion. [Can refrigerate until ready to cook.] Fry in pan with light coat of oil until browned on both sides. Serve plain or on toasted buns. Goes nicely with Becky’s Crock Pot Corn. (Can even serve on a toasted English muffin with a fried egg on top for brunch!)
