Pierogi Casserole

  • 1 lb smoked sausage
  • 32-36 oz frozen pierogies, any flavor
  • 1 cup shredded cheddar or cheddar blend
  • 1 sweet onion (1/2 cup) diced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tbsp prepared mustard
  • Salt and black pepper to taste

Spray inside of crock pot with cooking spray. Lay sliced sausage in bottom of pot and add onion. Lay pierogies on top; stir together broth, cream, mustard, and seasonings and pour over the top. Sprinkle cheese on top, cover and cook on high for 2-3 hours or low 4-5 hours. Stir before serving.

This is a new recipe created for Crocktober, my new celebration of all things Crock-Pot!

They are like half-moon ravioli, filled with cheesy mashed potatoes. Very polish.
