- 2 chicken breasts, diced
- 2 cups fresh or frozen vegetables (such as carrots and broccoli)
- 1/2 cup diced onion
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup water
- 2 tbsp sesame or other oil
- 1 tbsp honey
- 1 tsp minced garlic or 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- 1/2 tsp chili garlic paste (optional)
- Salt and black pepper to taste
Place chicken in pot and sprinkle with salt and pepper; saute in oil on high until mostly cooked. Turn off pot, stir in all other ingredients except vegetables (not including onion) and rice until incorporated and set pot to Pressure Cook for 5 minutes. After quick release, open and add rest of ingredients; set for Pressure Cook again for 3 minutes. After quick release, stir and serve.
